The chicken is so easy. All it is is split chicken breasts with the bone in and skin still on (the skin is the best part). Cover it with whatever is in your spice cabinet (anything that's not sweet, as my mom says). I used Paprika, garlic powder, adobo, allspice, Seasoning Salt, some pepper, lemon pepper seasoning. Bake in the oven for 1 hour at 350 (be sure that it's cooked all the way through!). The chicken is sooo juicy and the skin is nice and crispy and flavorful. Yum!
For the mashers - another incredibly easy recipe. Make them just like you would make mashed potatos. Cut up a head of cauliflower and boil it in a pot until it's nice and soft. After you drain them, put them in your mixer with some cheese, butter, milk, and onions - whatever you usually put in your mashed potatoes and you're good to go! You can see in the picture I was a little heavy on the milk... haha. But they were still yum-o-licious! Enjoy!
